Position Summary: Perform all cooking tasks in the kitchen. Prepares, cooks, seasons and portions foods as per the approved recipe. Essential Job Functions:Usually specialized in roast and entrees, prepares sauces, cold meats and vegetables.Procures a supply of meat, fish, and poultry from the chill box. May cut up meats, fish and poultry. Broils and/or sautes meat, fish, and poultry by changing position of pan or grip in broiler that regulates heat to provide the proper intensity of heat. Checks condition of meat and adjust at frequent intervals.Fries meats, fish, fowl.Fills order, garnishes and may add sauce before given the order to the server/Kitchen Captain.Cuts and serves food items.May set up buffets. May cook or do other food preparation under the supervision of the Sous Chef or Executive Chef.May broil vegetables. Assist fry cook when needed.Prepares pupus and special menu request.Maintains a neat and organized work area.Inspects sanitary conditions to insure maintenance of company standards and conformance with the health code.Strives to control food cost.Follows established recipes.Must have TB clearance.
