Proceso de selección continuo.FuncionesJob Title: Head Sommelier Responsible to: General Manager Place of work: Jul's Scope and general purpose : Taking care of wine. Keep under control the storage, purchases and service in constant communication with the other departments. Supervise sommelier in their daily performance. Perfect knowledge of the wine list: taste, quantity and price, in order to give the best experience to our guests. Responsibilities : Lead and oversee all aspects of the wine and beverage program in a luxury fine dining environment Curate, develop, and continuously refine a world-class wine list aligned with the restaurant’s culinary vision Manage wine procurement, supplier relationships, and exclusive allocations Oversee cellar organization, inventory control, and stock rotation Monitor beverage cost, margins, and overall profitability of the wine program Deliver exceptional tableside wine service, including decanting and presentation at the highest standards Provide expert food and wine pairing recommendations to guests Ensure personalized, memorable experiences for VIP and high-profile clientele Handle guest inquiries, special requests, and rare wine sourcing Recruit, train, mentor, and evaluate the sommelier team and service staff Conduct regular wine education sessions and tastings Foster a culture of excellence, precision, and luxury hospitality Contribute to marketing initiatives, wine dinners, and special events Represent the restaurant at industry events, tastings, and winery visits Ensure compliance with all local alcohol regulations and health & safety standards Maintain impeccable presentation and uphold the brand’s luxury service standardsRequisitos1. Advanced Wine Knowledge Extensive knowledge of Old and New World wines Deep understanding of grape varieties, terroir, vintages, and winemaking techniques Up-to-date awareness of global wine trends and emerging producers 2. Wine List Development & Cellar Management Expertise in curating and maintaining a world-class wine list aligned with the restaurant’s culinary identity Strong supplier and producer relationship management Inventory control, purchasing strategy, and cost management Pricing strategy with a focus on profitability and luxury positioning Proper storage, rotation, and cellar organization 3. Guest Experience & Service Excellence Exceptional tableside presence and storytelling ability Expertise in food and wine pairing Ability to tailor recommendations based on guest preferences and spending profiles Handling VIP guests with discretion and professionalism Delivering refined decanting and wine service techniques 4. Leadership & Team Development Training and mentoring sommeliers and service staff Conducting wine education sessions and tastings Creating a culture of excellence and continuous learning Collaboration with Executive Chef and Restaurant Manager 5. Commercial & Business Acumen Revenue-driven mindset with proven upselling ability Budget planning and financial performance tracking KPI management (average check growth, beverage cost percentage, inventory turnover) Negotiation skills with distributors and wineries 6. Certifications & Professional Credentials Advanced certifications such as WSET Level 3 or Diploma Court of Master Sommeliers (Certified / Advanced Sommelier preferred) Strong competition background is a plus 7. Personal Attributes Polished, charismatic, and confident personality Impeccable grooming and luxury hospitality standards Strong communication skills in English (additional languages are a plus) Passion for excellence and attention to detail Ability to perform under pressure in high-end service environments
